1. Ghee Mysore Paak

For making delicious Amisaar Ghee Mysore Paak, begin with a cup of all-natural besan flour. Roast it over a low flame for approximately 8-10 minutes until it becomes fragrant. Afterward, ensure a smooth, lump-free texture by sieving the besan.

Next, add about half a cup of amisaar ghee into the besan and blend it thoroughly to ensure a smooth, lump-free mixture. In a kadai, mix 1/4 cup of water with 1 cup of sugar and heat it over medium flame, continuously dissolving the sugar. Continue boiling the syrup until it reaches a one-string consistency. Once achieved, reduce the heat and add the besan mixture, thoroughly mixing it until the ghee is fully absorbed.

Now, on low flame keep adding two spoons of amisaar ghee and keep mixing it for about 15 minutes. Once done, transfer the prepared mixture onto butter paper and allow it to cool for around 30 minutes. After cooling, cut it into your preferred shapes, and it's ready to be served. For extended freshness, you can store it in an airtight container in the refrigerator for up to two weeks.

2. Puran Poli

Start by thoroughly rinsing and soaking a bowl of chana dal for 30 minutes. Next, pressure cook the chana dal until you hear 5-6 whistles, and then let it cool. Once cooled, strain any excess water and transfer the cooked chana dal to a separate bowl.

In a pan, heat some amisaar ghee and add cardamom powder, cinnamon powder, and nutmeg powder, and fry for a few seconds. Following this, add the cooked chana dal and jaggery to the pan. Stir the mixture over a low flame until it becomes completely dry. Once the filling is well-cooked, set it aside to cool, and then use a potato masher to mash it.

Now for making the poli, take some whole wheat flour, multipurpose flour, and salt in a bowl. Knead soft dough by adding some ghee and water and keep it aside for 15-20 minutes.

Next, prepare some balls from the dough, roll them in small circles and fill the prepared mixture. Now cover it and start rolling again. Prepare stuffed parathas and fry them on a hot Tawa using amisaar ghee. Your delightful and healthy Puran polis are ready to serve.

3. Kaju Katli

To create the beloved Kaju Katlis, begin by grinding cashews into a fine powder, ensuring they don't become a sticky paste. Next, over low heat, combine sugar and water in a pan. Once the sugar dissolves, gradually add the cashew powder to it. Stir the mixture over low heat until it thickens, resembling a dough-like consistency, which usually takes about 10 minutes.

Take a flat pan or dish and line it with butter paper. Spread the cashew mixture onto it, adding a touch of amisaar ghee, and roll it out with a rolling pin until it reaches a thickness of 3 to 5 mm. Allow it to cool. After some time, cut it into individual pieces, and you'll have your delightful Kaju Katlis ready to enjoy.

4. Instant Jalebi

Who doesn’t love hot jalebis? Well here’s how you can make jalebi easily and quickly. In a pan heat some sugar and water on low flame. Cook until it thickens and then add some lemon juice. Mix well and keep it aside on lowest flame on a burner.

In a bowl, mix a cup of all-purpose flour, 3 tablespoons of cornstarch, ghee, yogurt, a pinch of salt, orange food coloring, and water. Prepare flowing consistency batter by gradually adding water. Then, gently mix in eno or fruit salt. Transfer the batter into a piping bag or sauce bottle and use it to shape jalebis in ghee. Fry them over low heat until they become crispy. Once fried, let them soak in the prepared sugar syrup for 2 minutes. Transfer to a plate, and your instant jalebis are ready to delight your taste buds!
